Pan-Seared Sea Scallops

I love scallops, but I was always afraid to cook them.  I didn't think I could make them as tasty as the restaurants.  This recipe is extremely simple, yet so delicious.  This recipe allowed me to overcome my fear of cooking scallops with delicious results.  If you love sea scallops like I do, you must try this simple recipe.


Ingredients 
1 to 1 1/4 pounds dry sea scallops, approximately 16 
2 teaspoons unsalted butter 
2 teaspoons olive oil 
Kosher salt 
Freshly ground black pepper
Parsley

Directions 
Rinse scallops with cold water and thoroughly pat dry.  Sprinkle scallops with salt, pepper and parsley, then set aside.  Add butter and oil to a saute pan on high heat.  Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other.  Sear the scallops for 2 minutes on each side.  The scallops should have a golden crust on each side while still being translucent in the center.  Serve immediately and enjoy.

  4. Girlfriend you read my mind! We love scallops, but have been intimidated to cook them. We can just hear Gordon Ramsey screaming in our ear, "they are bloody raw!" LOL We will have to give this a go!! Thanks for sharing.
