Pumpkin Eggnog

source
One of my favorite seasonal drinks is Silk brand Pumpkin Spice.  It tastes similar to eggnog with a subtle pumpkin flavor.  I was really looking forward to picking up a carton while grocery shopping last week.  Sadly, I have not been able to find it.  So what's a girl to do?!  Make my own, I guess!  I started with an easy eggnog recipe, then added some canned pumpkin puree until I was pleased with the flavor.  It tastes great!  I'm looking forward to making it again.

Ingredients
6 egg yolks
1 (14 ounce) can sweetened condensed milk
1/2 cup canned pure pumpkin
1 teaspoon vanilla extract
4 1/2 cups milk
1/4 teaspoon ground nutmeg

Directions
In a large mixing bowl, beat egg yolks until they are thickened and light. Gradually stir in condensed milk, pumpkin, vanilla and milk. Stir nutmeg into the mixture. Pour all ingredients into blender and mix. Pour into glasses, and garnish with nutmeg.

*Use caution when consuming raw and lightly cooked eggs due to the slight risk of salmonella or other food-borne illnesses. To reduce this risk, it is recommended that you use only fresh, properly refrigerated, clean grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell. Pregnant women, young children, the elderly should not consume raw eggs. source

  3. I am constantly surprised by all the pumpkin products available there. In Australia there is only fresh pumpkin. Anything pumpkin has to be made from scratch. But this recipe looks extremely tempting.

  12. I never thought of making my own! My kids love eggnog, so I pick it up every time I'm at the store during the holiday season. I might just try this when Christmas is over and they quit selling it.

  19. This sounds so good, I've never tried making my own eggnog but I'd love to try it sometime! The combination of eggnog and pumpkin sounds so good, can't believe I've never though of it!! One of my go-to drinks in the winter is a chai eggnog latte at Starbucks, I am sure that pumpkin must be delicious with eggnog too. Thanks for the idea!

  21. Is the 5oz of condensed milk a typo? it comes in 15oz cans not 5.. i tried to check other recipes but they used sugar.. i think condensed milk would make it creamier..
