Steamed Clams Served wih Shallot Butter

Earlier in the week my family and I gathered around the table and enjoyed a bowl of steamed clams.


Clams in the winter?  You bet!  They were delicious.  I used middle neck clams and served them with shallot butter.


This is a great recipe if you love clams.


Ingredients- Shallot Butter
1 cup butter
1 cup finely chopped shallots
1/2 tsp. chopped fresh parsley
salt and freshly ground black pepper to taste

Directions
Heat butter in small saucepan.  Stir over low heat until butter melts.  Add the shallots and cook, stirring frequently, until browned, about 8 to 10 minutes.  Season with salt, pepper and parsley. 


Ingredients- Steamed Clams
100 middle neck clams
2 tbsp. extra virgin olive oil
6 cloves of garlic minced
1/2 cup chopped fresh parsley 
2 cups water

Directions
Scrub clams clean to remove dirt and sand in cool water.  Remove and discard all broken or opened shells.  In a large pot, heat olive oil over medium heat.  Add garlic; saute for 1 minute, or until tender.  Add water and increase heat to medium-high until water is brought to a simmering boil.  Add clams, cover and cook until all clams open, about 7 minutes.  Sprinkle with parsley.  Serve with warm shallot butter.

  12. Clams!! Oh, I love clams!! My husband isn't a huge fan of seafood - I don't get to cook it as often as I want to. I might have to try this out on him, though.

  13. I'm not a clam eater but I do love lobster and shrimp, I think my husband would like them though...so he can cook them!!! lol.
    I hope I feel the same way about the Shark as you do in a few months...I really needed to get one the mop just wasn't working at all!
