Baked Mini Doughnut Recipe

A few weeks ago I ordered a mini doughnut pan from Zulily.  I'd been eyeing them for months and couldn't wait to start using it.  The first recipe I tried was a big. fat. fail.  The doughnuts were dry and tasteless.

My second attempt was much better than my first!

This recipe worked well with my mini doughnut pan.

The doughnuts were light and fluffy.  The glaze adds the perfect amount of sweetness.

A special treat for children with a sweet tooth.

I could eat about 5 of them in one sitting and convince myself it's OK because they're mini!


Ingredients- Mini Doughnuts
1 cup all-purpose flour 
3/4 teaspoon baking powder 
3/4 teaspoon baking soda
1/4 teaspoon salt 
1 egg (lightly beaten) 
1/3 cup buttermilk 
1 tablespoons melted, unsalted butter 
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons real maple syrup

Ingredients- Glaze
3 tablespoons butter 
1 cup powdered sugar 
1/2 teaspoon vanilla extract 
3 tablespoons evaporated milk 

Directions- Mini Doughnuts
Preheat oven to 325 degrees F. Spray mini doughnut pan with nonstick cooking spray.  In large bowl, mix together the dry ingredients.  In a separate bowl, whisk together the vanilla, egg, melted butter, syrup and buttermilk.  Add the dry ingredients to the wet and mix until thoroughly combined.  Place the doughnut batter in a plastic bag, snip a small corner off the tip and pipe batter into the wells of the doughnut pan.  *Be careful not to over fill.  Bake for 10-12 minutes. The doughnuts will not be very brown, but they should be springy to the touch.  Allow them to cool in the pan for about 5 minutes before turning them out on a wire rack. Then dip each doughnut in the glaze to coat.

Directions- Glaze
To make glaze,  melt butter in a small sauce pan over medium heat.  Once melted, pour butter over powdered sugar in a small bowl.  Stir in vanilla and milk until smooth.  Dip cooled donuts in glaze.  Sprinkle with jimmies!  I'm from South Jersey, we call them jimmies.

  2. You know what? I've never seen a mini donut pan! Oh what my kids wouldn't give if I would make them some of those....too dangerous!! :) They look really yummy Brandi. Thanks for sharing the recipe. Enjoy your Sunday!

  7. You are so creative, love the pictures, made my mouth water. I did purchase one of those pans but mine was for larger ones. I am glad you posted the recipe, I will have to try it once I get my life back to normal.
