How do you like your Tomatoes?

  The older I get, the more I learn to appreciate the simple things in life.  Like the smell of fabric softener on freshly laundered clothes.  Matching socks, and tomato sandwiches. 
  As a child, I can remember my mom often enjoying tomato sandwiches for lunch.  She always made them look so good, but I was never really interested in having a bite.  As I got older I learned to enjoy most of the foods I turned away as a child (Most...I still hate beets!).  Tomatoes are great by themselves, but even better in a sandwich!


Tomato Sandwich recipe

  • Toast 2 pieces of your favorite bread in a pan with butter
  • Place 2 slices of cheese ( I prefer provolone) on top of bread
  • Once cheese is melted remove from pan
  • Spread mayonnaise on one slice of bread
  • Top with as many sliced tomatoes as you can stand!
  • Sprinkle tomatoes with a little salt and pepper
  • Top with the other piece of toast
  • Cut and Enjoy!

  1. I agree... the simple things in life are the best! My grandmother was from the South and she made a dish with fried green tomatoes. I never think to add tomatoes to grilled cheese but I will now :)

  3. I also like a lot of things now that I wouldn't touch when I was younger! :-) But as for tomatoes, I just can't stand the taste. I hate when I forget to tell the waitress I don't want them on my salad, and then there are too many little pieces to pick out, ha!

  5. I started gardening specifically with fresh tomato sandwiches in mind! I like them plain, with cheese, with bacon, with avocado...and mayo, gotta have mayo. You just can't go wrong with a tomato sandwich.

    As for beets, I thought I hated them too...but the past week, I've been eating a ton of them roasted with a bit of olive oil, s&p. Pretty good! Even had them with Christmas dinner.

  6. So simple, and so tasty. I was never really a fan of tomatoes growing up, but as my love for cooking has grown, so has the tomato's appeal! :)

    This looks delicious just as it is. I think I'd like to eat one right now. :) A little sliced turkey meat and a little prosciutto or bacon might add a little oomph for a heartier sandwich. I love that sandwiches are so random, and you can just make them however you want them! Love it.

  9. I love tomato sandwiches and grilled cheese sandwiches so this sounds yummy! You cracked me up with the "beets" reference because that is the only food I don't care for too.

  14. Tomato (with bacon) grilled cheese and tomato basil soup is one of my favorite things ever. Unfortunately I have yet to find a gf bread recipe that I love.

  17. Oh my, and I thought I made my tomato sandwiches fattening lol. Will have to try this, but I don't know how you can get much better than a good ole tomato sandwich with mayo dripping from it. Your right, simple things are more meaningful as we get older. Oh, and if I still only ate what I ate as a child, I wouldn't have these hips and thighs that I have now. I am a new follower, stop by my place some time.

  21. I keep finding that the simple things my mom used "indulge" in that I thought were SO GROSS are really quite awesome!! I love these too. And...I know it's bad...really bad but I LOVE the sourdough jack from Jack in the Box but I love it most of all for the DELICIOUS big bright red juicy tomatoes they put in it!
